Casey (with Jaime) of Santa Magdalena celebrated his birthday while in Panamá City.  This was his birthday cake; we got to share!.  It was luscious to be sure!

Crust:

3 cups graham crackers, crushed

1/2 lb. butter, melted/softened

1/4 cup sugar

 

Filling:

2 8 oz. pkgs cream cheese

3 eggs

1/2 cup sugar

1 tsp. vanilla

 

Topping:

2 cups sour cream

1/4 cup sugar

1 tsp vanilla

 

If using a springform pan, line bottom and ring with aluminum foil.  Combine all crust ingredients into your pan.  Mix well to consistent mix.  Press to pan to form crust. 

Preheat oven 375 degrees F.  Beat filling ingredients well; pour into crust.   Bake 20 minutes.

 

* COOL 45 minutes*

 

Increase oven temp to 475 F.

Beat topping ingredients together and pour on top of cake after it has cooled.  Bake an additional 10 minutes. 

 

Cool and chill at least 24 hours before serving.

In bowl mix flour, sugars, salt and baking powder.  Pour in beer, all-at-once with bubbles and stir until just combined (it will be lumpy and sticky).  Pour into greased bread pan and sprinkle 2 more Tbs of sugar over the top.  Pour evenly melted butter on top of sugar.  Bake at 375-400 °F for 30 min until brown and inserted knife comes out clean.
