While at Samal Island in the Philippines and in the marina and then boatyard, we enjoyed many a Friday-night international potluck.  At one of these potlucks, Glenda of the Belgian yacht Helena prepared a dish inspired by a local Filipino dish, eggplant omelet or "tortang tulong.  This vegetarian dish is sure to please everyone.

4 Japanese-type eggplant

3-4 eggs

1 plateful bread crumbs

sesame seeds

~1 tsp. soy sauce

1 large onion, chopped

5 small tomatoes, chopped

1/2 head garlic, chopped fine

sea salt to taste

3 peppers, green and red, chopped fine

3 tsp. parmesan cheese, grated

cooking oil

~4 c water

 

Saute onions, tomato, garlic and peppers until tender.  Mix soy sauce and parmesan cheese in with vegetables.

Boil water and steam eggplants whole.  Remove the skin.  Flatten eggplant with a fork. 

Beat eggs with salt and pepper.  Dip flattened eggplant pieces in egg mixture.  Roll in bread crumbs. 

Heat oil in a frying pans and cook eggplant on one side.  Flip and then sprinkle 2 spoonfuls of vegetable mixture on each one while cooking.  Repeat until all eggplant are cooked.
