We invited Jay and Danica of Alkahest over for a meal on Carina while we were anchored in Zihuatanejo. Alkahest is a vessel from Seattle, though we didn't know Jay and Danica until we began cruising. After Philip's famous margaritas and much raucous laughter we served Jay and Danica this meal. Danica said it was the best fish dish she had ever had and asked for the recipe. Adjust the ingredients to make it more or less spicy to your taste.
1/2 cup coconut milk
juice of one lime
1 t lemon grass
1 garlic clove, minced
1 t honey or brown sugar
1 t tumeric
1/2 t cumin
1 T Thai Green Curry Paste
1 T cilantro
1/2 t coriander
1 t habañero sauce
1 t chili pepper flakes
Marinate white fish filets in the refrigerator for at least two hours. Poach fish in marinade over medium heat (do not boil!). Fish can be poached in foil on the grill or in a covered large deep fry pan. Serve with the poaching sauce over white rice.
