One fine day when the tradewinds were fresh, Philip wandered into Simon's, an open-air market in Kolonia on Pohnpei in the Caroline Islands.  Simon's sells local produce, fish and handicrafts.  This day, he found freshly caught shrimp, a treat for us since most shrimp is farmed and we try not to buy farmed seafood.  Upon returning to the boat, Leslie found Philip awash in local ingredients including fresh mushrooms and these shrimp.  Philip whipped up this sauce and we enjoyed them as an appetizer along with ice-cold cocktails.   This wasn't the first time he'd made such a spicy tasty sauce so we thought it wise to record his recipe.  This sauce would also be suitable for  left-over chilled white meat fish instead of shrimp ...or even oysters on the half shell.

Mix all ingredients and chill.  Pre cook the shrimp and serve cold on on a bed of romaine lettuce.  Peel and dip in cocktail sauce.

tomato sauce 4 oz can

1 tsp hot chili salsa with garlic

pinch salt

1/2 tsp black pepper

1/2 tsp cayenne pepper powder

1 tsp. fresh squeezed lime juice

1 Tb finely chopped fresh basil or 1 tsp. dried basil

wasabi to taste (ca. 1 1/2 tsp.)
