Suzi & David of the cutter Sidewinder hail from southern California.  We first met them in Fiji but didn't really get the chance to know them until we rally-ed together to Indonesia from the Philippines.  They also returned to Samal Island after their visas expired (as did we) so as to have a good place to leave Sidewinder while they explored SE Asia.  It was at Oceanview Marina in the Davao Gulf at a cruiser potluck where we were introduced to this tasty, unusual dish and begged the recipe.  It is a quick and easy-to-prepare crowd -pleaser and a fine side dish at a summer BBQ.

1 cup brown rice, steamed

1 cup fresh ripe mango, peeled and chopped

1/4 cup red onion, chopped

1/4 cup cilantro, chopped

1 Tb fresh jalapeņo pepper, minced

3 Tb fresh lime

1/2 tsp sea salt

1/4 cup extra virgin olive oil

 

Method

 

Cook rice.  Allow to cool.  Mix with other ingredients.   Stir to combine.  Serve immediately or chill until serving.
