[Punta Cocos, Isla Del Rey, Rep. of Panamá; 08º 13.9'N/078º 54.3' W]

Las Perlas archipelago in the Republic of Panamá has an abundance of fish.  We spent time here in 2008 with friend Joe of the Westsail 32 Panacea, and enjoyed his company over many a fish dish.  Joe refused to waste any part of a fish and developed this recipe to use the fish remains after filleting.  (The photo shows Joe's catch of Mexican needlefish caught at Isla Pedro Gonzales.)

 

In 3 quart pan (e.g. pressure cooker) mix:

1 or 2 fish carcasses

3 Tb soy sauce

1/2 head garlic, chopped fine

1/2 onion, chopped fine

juice of 2 small or 1 regular lime (limón)

dash of "All Spice"

2 leaves cabbage, chopped

red pepper flakes to taste.

 

Cook until fish is tender.  Adjust spices to taste.
