Andy of Soy Libre fame stopped by as Frank was making Curry and asked for the Recipe so I though you might all enjoy having this simple Curry Sauce recipe.   This makes enough sauce for 1 lb. of shrimp or chicken or vegetables.   Bon Appetite, Shirley


1/2 Onion chopped

1 Clove Garlic, minced

2 T Butter

1 Medium Apple, peeled and chopped

2 T flour

2 C Chicken Broth

1/2 C White Wine or Apple Juice

2 T Curry Powder

pinch of cayenne Pepper

pinch of salt


Saute onions and garlic in butter in butter until golden. Add apple and mix well. Sprinkle with flour and stir until to smooth out any lumps. Bubble for 1 minute. Slowly add chicken broth (vegetarians could use vegetable broth) and wine. Add curry powder, cayenne and salt and simmer 1 hour on low.   Taste sauce and adjust cayenne and salt to your personal taste. Serve with chicken, shrimp or vegetables over rice.
