Chimichurry is a marinade or barbecue sauce.  This recipe is from Miguel Pionce a.k.a. Taller Electroman in Puerto Baquerizo Moreno on Isla San Cristobal in the Galapagos Islands.  Pionce and Rolando (pictured) fixed Carina's starter one day and took us to visit Rancho Chimichurry, his finca,  the following day.  Once back at his shop he graciously provided us his recipe (receta) for chimichurry.

Chicken (Pollo)


Basil, fresh (Albahaca)

Cream (Crema de Leche)

Chicken Stock (Cubo de Maggi)

Ajo, three cloves

Parsley (Perejil)

Salt to taste (Sal al gusto)


Blend ingredients of marinade and add to chicken.  Leave overnight
