Hope & Rich Logie of the Catalina 42 Ceilidh (pronounced KAY lee)  left us in the Galápagos on October 27, 2006 and were heading north to Costa Rica, Nicaragua, Mexico and back to the US in pursuit of a happier cruising kitty.  The night before they left, knowing it may be a very long while until we were together again, we enjoyed supper together on Carina.  These wonderful carrots were Ceilidh's contribution to the meal and will bring back good memories to us whenever we enjoy them. 

 

....Oh, you asked for the carrot magic. Here you go:

Happy Carrots a la Ceilidh

Start out with happy carrots. Not tough or stringy and sweet to taste

Peel them and cut into bite size pieces

Select a pan that fits your pile of carrot bits and add about an inch or so of water

Season the water with some salt and a sprinkle of cinnamon

When it boils, add the carrots and place a lid on the pot - reduce the heat so that it gently steams the carrots

Once the carrots are as tender as you like drain the liquid and add some butter and honey to taste

Voila! Happy Carrots!
