We met Jeff and Jose (a Dutch name pronounce YO say) in Panama City after meeting them first on the SSB radio.  Unfortunately for us, they've gone east through the canal for now but we are hoping they'll rejoin us in the Pacific in 2010.  This boterkoek is a Dutch specialty which Jose made for our 2008 Thanksgiving feast at La Playita in Panama City.

8 oz. plain flour
7 oz. butter
5 oz. sugar
sliced almonds
1 egg yolk

Mix flour, butter and sugar till smooth dough.
Put in baking tin, put almonds on top and brush with egg yolk.

Bake at 425 degrees F. for approx. 25 min. Let cool before cutting.
