Leslie visited friend Michelle aboard the vintage race boat Warrior in Brisbane, Australia.  Being from Oz, Michelle was keen to introduce Les to Aussie treats, such as this hearty, satisfying, tasty sandwich which she packed for lunch when they undertook an excursion - with Carolyn of Lightheart -  to the Lone Pine Koala Sanctuary up the Brisbane River.  Other Aussie treats of the trip included bangers, cheerios, Jaffas, and roast leg of lamb with garlic, rosemary and anchovies.  Les somehow managed to duck Vegemite!

 

Whole grain wheat bread, sliced

Butter

Hen eggs, 1 - 1 1/2 egg per sandwich

Curry powder mix

Black pepper

 

Remove butter from refrigerator to allow it to soften.  Keep covered. 

Boil eggs until hard boiled, ca. 10 minutes.  Allow to cool and remove shells.  Chop whole egg (yolk and white) very fine.  Mix in ~ 1/4 tsp butter per egg, plus curry powder and black pepper to taste, creating a slightly chunky mixture that holds together.  Spread butter on two slices of bread then spread curried egg mixture on one slice and cover with second slice.  Wrap tightly.
