A whole bunch of sailing boats assembled in Koror, Palau at the end of the North Pacific cruising season.  Many of us had been talking on HF radio for a year or even more without ever having met.   Aboard La Gitana we assembled for a happy hour celebrating Michaela's birthday and also the birthday of Stephen of Westward II.  Selena, admiral of Westward II, brought this cake and it was fantastic!  She got it from Sue's daughter on yacht Cable's Length II. 

 

Ingredients:

 

Cake

 

2 cups carrots

1 ½ cups self raising flour

1 cup sugar

½ cup oil

3 eggs

1 tbsp vanilla essence

1 & 1/3 tsp bicarb soda (baking soda)

1 & 1/3 tsp baking powder

1 & 1/3 tsp cinnamon

½ tsp salt

½ cup walnuts

 

Icing

cream cheese

butter

vanilla essence

icing sugar

 

Method:

 

Mix the sugar, oil and eggs.

Add in the remainder of the ingredients minus the carrots and walnuts and mix until mixture is smooth.

Stir in the carrots and walnuts.

Bake for 45 minutes.

I cooked gas mark 5 (about 375 °F) for 55 minutes.
