Chief Chris Albert Ramoli visited us twice while we were anchored at Vanikoro, Solomon Islands.  He mediated spirited trading with us so that his people could obtain at least basic supplies from our relatively abundant stores.  He is a wise man who does the best he can for his people who have little support from the distant (geographical and cultural) government and we had many laughs with him, his "naughty" daugher, Chrisma and his brother in law, Leonard.

 

2 cups flour

1 Tb baking powder

1/2 tsp. salt

 

1 1/2 cup mashed bananas

2 eggs, beaten

1/2 cup brown sugar

1/3 cup honey

1/3 cup butter, softened

3 Tb cooking oil

1 tsp vanilla

1 cup milk

 

1 cup chopped walnuts

 

Method:

 

Coat a bread pan with a thin layer of butter and then dust with flour.  Preheat oven to 350 F.

In large bowl combine dry ingredients and mix with a fork until uniform. 

In second bowl, mash bananas with a fork,  add eggs and beat in.  Add sugar and honey and beat again.  Add butter, cooking oil, vanilla and milk and beat once more.

Form a large crater in the dry ingredients and then add the wet ingredients and stir with a spoon until just uniform.    Add nuts and stir briefly to distribute them evenly.

Bake approximately 1 hour until a toothpick inserted into center comes out clean.  Cool and then wrap tightly in cling wrap and store in the refrigerator.
