[Neiafu, Vava'u Group, Kingdom of Tonga; 18 40' S /173 59' W]

We met Richard and MaryAnn of the Beneteau "Jazz" while spending the cyclone season in Neiafu ("port of refuge") Tonga.  New to cruising MaryAnn was interested in baking aboard, so one day while baking bread we baked an extra loaf of Carina's "house" bread for the crew of Jazz.  Returning our culinary favor, MaryAnn whipped up this salad from the luscious fresh ingredients available in the lovely fresh local market where tiny juicy pineapples were in season and a small pile could be had for a pittance.

 

3-4 sweet carrots, peeled and slivered

1 small pineapple, cubed

1/2 cup walnuts, chopped

1/2 cup raisins

Optional: one apple, peeled and cubed

 

Mix together and chill.    The pineapple lends of lovely tingle to this crunchy delight.
