Alaskan salmon is fantastic and we had missed it when we traveled in the tropics.   When we arrived at Sitka on July 1, 2017, it was opening day of king salmon commercial fishing and the place was buzzing.  Salmon is still king there.  This luscious appetizer recipe was adapted from which had marketing materials at the museum in Wrangell.    It also makes a great sandwich filling.

        1 can salmon, 7.5 oz

        1.5 T lime juice

        1 chipotle pepper, chopped fine

        1-2 T adobo sauce from chipotle pepper

        1 T mayonnaise

        1 T fresh cilantro, chopped fine

        1 T red bell pepper, chopped fine

        1 T red onion, chopped fine

        1/2 clove garlic, minced

        black pepper to taste


Drain salmon and flake.  Mix remaining ingredients except black pepper in small bowl.   Add salmon black pepper and toss gently.  Refrigerate until serving on tortilla chips or whole grain crackers.
