We met Anna - a lovely young Philippina, and Kevin, an Aussie (who are fixing up monster Irwin named Niye Keema) - at gatherings at Mangrove Bay Marina in Pohnpei.    During one of our many chats, we learned of Anna's recipe for marinated green mangos.  Green mangos, you say?  Yes, green mangos.  It's a salad or appetizer, not a desert.  Luscious and very healthy.   This has a nice texture, and an unusual and addictive flavor - tart, salty, spicy, garlic...bursting forth. 

For two:

3 fresh green mangos

1 clove garlic, sliced very thin

~ 1 Tbs tamari (or soy sauce)

~ 1/2 tsp hot chili flakes

 

Peel and slice thinly, mangos.   Combine all ingredients and toss. Chill if not served immediately.
